Production Excellence
Pietrasanta extra virgin olive oil is crafted exclusively from high-quality Ogliarola and Cellina di Nardò olives, grown in our olive groves overlooking the sea. The olives are carefully harvested and transported to the mill within 12 hours (our *first secret*) for traditional mechanical cold pressing. The process ensures a low acidity level of just 0.2%, a hallmark of superior quality, as oleic acid is a key indicator of excellence in olive oil.
